Christmas Ham Left-Overs Salad
Perfect for picnics and lazy post Christmas lunches, this tasty salad is a clever way to use up leftover ham.
What you will need:

250g of brown rice, white rice, couscous, barley (your choice of grain really)

250g green beans, trimmed, cut into 2cm pieces

750g leftover Christmas Ham, chopped

200g baby tomatoes, halved

120g smooth feta, crumbled

1/2 cup firmly packed fresh mint leaves, chopped

1/2 cup firmly packed parsley leaves, chopped

1/2 bunch fresh chives, chopped
Dressing
-
2 tbsp extra virgin olive oil
-
2 tbsp lemon juice
-
5 tsp breakfast marmalade

1 tsp Dijon mustard
-
1 tsp finely grated lemon rind
Method:
- Cook your grain of choice as per packet instructions, set aside to cool.
- Meanwhile, place the beans in a heatproof bowl. Cover with boiling water. Stand for 2 minutes or until tender crisp. Drain, then refresh under cold running water.
- For the marmalade dressing, combine all ingredients in a small bowl. Season. Whisk to combine.
- Place the cooked grains, beans, chopped ham, tomato, feta, mint, parsley and chives in a large serving bowl. Drizzle with half the marmalade dressing. Toss to combine. Serve drizzled with the remaining dressing
