Cucumber with minted yogurt - Spring Snacking

The perfect healthy dip for your next snack attack or Spring picnic. This recipe is soo tasty and fresh + even the busiest of peeps can sleigh this one:
What you will need:
- 4 (520g) lebanese cucumbers
- 2 cup (500ml) yogurt
- 1/4 cup fresh mint leaves, finely chopped
- 1 clove garlic, crushed
- 1/2 teaspoon ground cumin
- 1 tablespoon lemon juice
Method:

Halve cucumbers lengthways, scoop out seeds. Finely chop cucumbers.

Combine cucumber with remaining ingredients in medium bowl, cover, refrigerate at least 1 hour before serving.
