Mandarin (or Orange) Oat Bars
A naturally sweet lunch box snack free of refined sugar.
Takes approx. 30 minutes to prepare and yields 8 servings.
Ingredients:

⅔ cup rolled oats

⅔ cup quinoa flakes

½ cup desiccated coconut

½ cup slightly crushed cornflakes

2 eggs, beaten

1 tablespoon honey

80g butter, melted
-
zest and juice of 1 mandarin or orange (50ml juice)
Method:

Preheat the oven to 180°C. Line a baking tray with baking paper.

Place all dry ingredients into a bowl and stir until combined. Set aside.

In a smaller bowl whisk together the beaten egg, melted butter, honey, mandarin/ orange zest and juice. Pour the citrus egg mixture over the dry ingredients and quickly stir until well combined.

Tip the mixture into the prepared tray, taking care to press down on tray to form a rectangle with 1cm thickness and bake at 180°C for 20 minutes or until golden brown.

Remove from oven and place on a wire rack. Allow to cool completely before removing from tray, then slice into bars. Store in an airtight container.
Note: keeps in airtight container for 1 week.
