Thanks Giving Pumpkin Pie Slice
What you need for crust:
1 cup coconut flour
1 cup almond flour
½ cup coconut oil
¼ cup honey
½ tsp cinnamon
¼ tsp sea salt
What you need for filling:
450g of pumpkin purée
3 eggs
¼ cup almond milk
½ cup maple syrup
1 tsp vanilla extract
1 tbsp pumpkin pie spice (alternate all spice)
½ tbsp cinnamon
¼ tsp sea salt
Method:
- Mix all crust ingredients in a medium size bowl until thoroughly combined & crumbly
- Add crust mixture to a lined 20cm x 20cm baking dish & press firmly to cover the pan evenly, then bake at 170°C for 8–10 minutes or until a little less than golden brown
- Meanwhile, thoroughly combine all filling ingredients in a medium bowl
- Once crust is ready, remove from oven & pour filling mixture over the crust, then bake at 170°C for 40 minutes
- Remove & let cool before cutting into 9 bars
