White & Dark Chocolate Pumpkin Peanut Butter Cups

A great way to use leftover pumpkin purée if you are carving pumpkins this Halloween. Try these Keto white & dark chocolate pumpkin PB cups for a slightly healthier treat this Halloween. 

What you need:

  • ½ cup pumpkin purée
  • ½ cup peanut butter
  • 1 scoop vanilla protein or half a teaspoon of vanilla essence
  • 2 tsp pumpkin pie spice
  • 1 cup dark chocolate chips
  • 1 cup white chocolate chips
  • 1 tbsp coconut oil
  • Flaky salt, to top


Method:

  1. In separate bowls, melt white & dark chocolate chips with ½ tbsp of coconut oil each

  2. Pour 1 tbsp melted white chocolate into the wells of a lined muffin pan & freeze for 5 minutes

  3. While freezing, mix together the rest of the ingredients in another bowl (this will be your filling)

  4. Remove muffin pan from freezer, then scoop 1 tbsp of the filling on top of the white chocolate layer & flatten with a spoon

  5. Pour 1 tbsp of dark chocolate on top, sprinkle with flaky salt & freeze until set

  6. Store in the fridge or freezer & enjoy
